Instructions

  1. Heat oil in a pot over medium-high heat. Add onions, ginger and garlic. Cook until onions turn golden.
  2. Add all dry spices and green chillies. Fry for a 2-3 minutes, until you smell the roasted spices.
  3. Add potatoes and cauliflower. Fry for 3-5 minutes for colour and flavour.
  4. Add canned tomatoes and mix well.
  5. Cover and cook on low heat, stirring occasionally, until vegetables are tender.
  6. Garnish with coriander and serve.
