Aloo gobi

- 150ml oil
- 2 medium onions, finely chopped
- 2 tbsp minced ginger
- 12 cloves garlic, minced
- 4 green chillies (or an extra 2 tsp chili powder)
- 3 tsp salt (or to taste)
- 1 tsp red chilli powder
- 1 tsp turmeric
- 4 tsp cumin seeds
- 4 tsp coriander powder
- 1 large head cauliflower (700g or so), cut into small florets
- 400g potatoes, peeled and cubed
- 1 can tomatoes (400g)
- Fresh coriander for garnish
Instructions
- Heat oil in a pot over medium-high heat. Add onions, ginger and garlic. Cook until onions turn golden.
- Add all dry spices and green chillies. Fry for a 2-3 minutes, until you smell the roasted spices.
- Add potatoes and cauliflower. Fry for 3-5 minutes for colour and flavour.
- Add canned tomatoes and mix well.
- Cover and cook on low heat, stirring occasionally, until vegetables are tender.
- Garnish with coriander and serve.
