Chicken fajitas

- 2 chicken breasts, sliced lengthways into thin strips
- 1 red pepper, sliced into strips
- 1 medium red onion, sliced
- 1 tbsp smoked paprika
- 1 tsp ground cumin
- Juice of ½ lime
- Black pepper
- Extra virgin olive oil
Salsa
- ½ fresh red chilli (or more), finely chopped
- 8 ripe cherry tomatoes, halved
- 30 g / 1 bunch coriander, chopped with stalks
- Juice of 1 lime
- 1 pinch salt
- Black pepper
To serve
- Tortillas
- 150 ml yoghurt (or less)
- 50 g cheddar (or more)
Instructions
- Put a griddle pan on high heat.
- Marinate bell pepper strips, onion, paprika, cumin, juice of ½ lime, black pepper, and a drizzle of olive oil together.
- Mix tomatoes, coriander, salt, juice of 1 lime, and black pepper in a bowl to make the salsa.
- Cook chicken and vegetables on the griddle.
- Place tortillas on top of the pan to soften with steam.
- Serve with salsa, yoghurt, and cheddar.
