Instructions

  1. Put a griddle pan on high heat.
  2. Marinate bell pepper strips, onion, paprika, cumin, juice of ½ lime, black pepper, and a drizzle of olive oil together.
  3. Mix tomatoes, coriander, salt, juice of 1 lime, and black pepper in a bowl to make the salsa.
  4. Cook chicken and vegetables on the griddle.
  5. Place tortillas on top of the pan to soften with steam.
  6. Serve with salsa, yoghurt, and cheddar.
