Gochujang pasta

This is a blend of a few different recipes that use gochujang in pasta sauce. It’s closest to the Mob Kitchen variant. My friend makes a different version that leaves out the sausage and uses silken tofu instead of cream.

This recipe is a work in progress, but it’s really hard to mess it up.

  1. Cook salciccia and set aside
  2. Sauté shallots/onions until golden
  3. Add garlic, cook for another minute or two
  4. Add gochujang
  5. Add half the vodka and let it simmer away.
  6. Add cooking cream. Simmer down to a nice creamy consistency.
  7. Add parmesan, salciccia and the rest of the vodka
  8. Salt and pepper to taste
  9. Use chili oil to add heat as needed.
